Imereti
Imereti lies in the center of Georgia, bisected by the main Georgian highway that runs East to west, and is home to Georgia’s second city Kutaisi and the Soviet era industrial ferro-alloy complex at Zestaphoni.
As such the region is a centre of commerce, transit and trade and it’s said that Imereti has the best roadside food in the whole country. Restaurants, shacks and braziers along the highway offer delicious fried chicken, a special version of khachapuri (the national dish, a kind of cheese-bread) that is made with layers of flaky pastry and strings of dried marigold flowers, known as Imeretian saffron, one of the main spices of Georgian cuisine.
